We use 100% locally sourced wheat from Gunma Prefecture, and our unique “momikiri uchi-seiho” method creates wide noodles that are approximately 1.5cm in width. Using a mechanized folding method, we have created udon noodles with a chewy and elastic texture that replicates the familiar ‘foot-treading’ process in traditional Sanuki udon noodle shops.
